Mini oat pancakes

Pancakes!

      Who doesn’t like them? Specially the little people at home are the happiest to see pancakes at breakfast. My daughters love them but during a weekday, its a real struggle to cook pancakes ,make them eat it on time and reach schools. Weekend I make sure they eat some Indian or Indian inspired breakfast and don’t  miss out  on our food culture. It’s just matter of few days and they can easily distaste and divert to conventional sugar loaded breakfast alternatives.

Well, doesn’t mean to torture them to eat what they don’t like all the time. I  surprise them sometimes with their choice of food , trying to be as healthy as possible. 

                My oat pancake recipe comes to rescue when they crave pancakes. It is refined flour / sugar free, vegetarian and eggless. 

What do we need?

 We need oats.. I use organic rolled oats as they are easy and quick to cook.

Bananas

Milk

baking powder

Ghee 

If you are looking for vegan option, substitute  milk for plant based alternative and ghee for oil.

Just for fun, the pancakes featured here in picture are mini version.

 But you can always make them normal size and enjoy. During  COVID’19 lockdown there was this trend of pancake cereal.. pancakes served in mini size and served with milk and fruit as cereal hence I tried them that way. This added some extra fun for kids!

Eggless Oats pancakes

Instructions
  1. Add oats in blender jar and grind till fine powder.
  2. Later add rest of the ingredients in same blender and whizz it into till smooth mixture.
  3. If making mini pancakes, pour prepared batter in a squeeze bottle .
  4. Heat a non stick pancake pan on medium heat.Pour a laddleful of batter for bigger pancake OR For mini pancakes, keep heat on low and pipe little little batter scattered all over the pan.
  5. Once the batter on top side starts getting dry with bubbles on it, flip the pancakes and roast from other side too.
  6. Serve hot pancakes drizzled with honey / chocolate sauce and with fruits of choice.
