Greek salad…simple ,healthy & refreshing
Salads if at all exist in my meals , they have to be easy to make and devoid of any unhealthy ingredients like sugar , yet be tasty! These are my prime requirements. One such salad i adore not just for its healthy recipe but the taste and crunch…It can never go wrong and you will crave for it every time you think of a salad.
What is Greek cuisine about?
As far as I understand the Greek cuisine, its all about fresh ingredients put together with some more fresh flavours. e.g fresh produces like fish, tomato, cucumber ,potatoes are used mainly along with flavourings like olive oil, oregano, lemon, dill etc.
What is Greek salad?
Greek salad is a summer salad also called as Horiatiki salad from land of Greece. If you visit any Greek restaurant or any Greece village, this salad is sure to be served. It is usually prepared with fresh cucumbers, onions, olives and feta cheese which are later dressed with the olive oil and oregano which are produced locally in mountains of Greece.
What I love about Greek salad?
It is easy to make, ingredients are readily available in the kitchen, no preparation required, doesn’t have any sugary ingredients and it is kids friendly. In general I’ve seen the kids like to eat cucumber and cherry tomatoes. So this salad makes a kids pleaser bowl of goodness.
How much time it needs?
Hardly takes 10 minutes from start to finish and can be refrigerated for later use.
When storing for later use:
Make sure to keep vegetables and vinaigrette separately and combine only when needed. Feta cheese tend to crumble and lemon juice along with cucumber can make it watery if combined and stored.

- Start by chopping vegetables and mix them in a large mixing bowl.
Steps to make:
2. Prepare the vinaigrette by whisking all ingredients like olive oil, lemon juice, mustard, slat pepper etc.
3.When ready to serve, mix prepared vegetables, olives , feta and pour in vinaigrette .Toss gently till vegetables get coated well.
4. Set aside for 10-15 minutes for flavours to infuse.
Ready to serve.

- 1 English cucumber (long) ... seeded and sliced
- 8-10 baby plum or cherry tomatoes ..halved lengthwise
- 1/2 red pepper ..diced
- 1 small red onion .. sliced
- 150 gms feta cheese ..cubed
- 8-10 olives ..preferably calamata variety
- 4 tbsp Extra virgin olive oil
- 1 tbsp lemon juice (or vinegar)
- 1/2 tsp Dijon mustard
- to taste salt
- 1/4 tsp black pepper powder
- 1/2 tsp oregano
- 2 garlic cloves ...minced
- 1 tbsp fresh mint leaves (optional) ..chopped finely

For dressing/ vinaigrette:

- Mix all prepared vegetables , feta and olives in a big mixing bowl.
- To prepare vinaigrette, mix all ingredients listed under 'for dressing' in a small bowl or glass jar. Make a uniform mixture by whisking everything together.
- Add the prepared vinaigrette over the prepared vegetables and toss gently taking care the feta doesn't crumble. Ready to serve.
- Feta cheese has crumbly texture . If you want pieces of feta to stay intact, add them last in salad and toss gently.
- If serving lateron, prepare vegetables and vinaigrette and set aside. Combine just before serving.
- In traditional greek recipe no nuts are added but i sometimes add roasted walnuts which give a good crunch.
