Kolhapuri Bhadang–spicy puffed rice mixture
Bhadang or some of us know as murmura namkeen is an easy ,quick and healthy snack made with puffed rice (murmura/churmura) along with peanuts, dalia (roasted chickpeas ), curry leaves and not to forget garlic. Doesnt matter whta time of the day it is, be a lazy morning breakfast, rainy afternoon, sluggish evenings or after dinner binging,,this namkeen is a star accompanied by a hot cup of chai.
We ,folks from Kolhapur are very fond of spicy food, hence may be we spiced up the comforting bland puffed rice into bhadang!
It very common to find this snack in food shops at Kolhapur. But there is distinctive brand which we all are fond of , which is in a small town near Kolhapur. The owner of this particular make started with pennies and now they supply all over Maharashtra. See the power of simple namkeen and the tastebuds. Whenever I used to travel past this town, no matter who is accompanying me, they have to take a hault and buy me this particular bhadang. Well they have their own recipe, which is obviously secret, no matter what you try it never goes nearby to it.
Recipe I’m providing here is one my mum always makes, tried trusted and used since ages.
Easy fix !Nothing can go wrong with this recipe as if anything is excess or less can be balanced lateron. e.g less murmura and more spices, add some murmura OR mo re salt, add in more peanuts or murmura and your namkeen is fixed.And how much time does it take? Only 10 minutes of cooking! You can whizz it up while children are getting fresh or even while tea is boiling for your guests.
How to serve it?
There is no rocket science to serve bhadang but you might want to try serving it with finely chopped onions.They go along very well.
What else can be made with help of it?
If bhadang is ready sitting in the shelf, you will atek only 5 minutes to make tasty bhel. Add some chopped onions, farsan mixture , tamarind-date chutney and hola!!!! bhel is ready !
What I personally like about this snack is it provides satisfaction to your tastebuds without overeating.As well as there are some good proteins from peanuts and dalia,not to forget the super herb-curry leaves.
I add both green chillies and red chilli powder but one can skip one or other according to choice.I like the red colour chilli powder brings and the spiciness green chillies add. If you don’t like it spicy ,just leave the chillies in bowl and enjoy rest of it.
Is puffed rice good for you?
Yes, it is a low calorie snack, providing only 50-60 calories per cup of serving of plain puffed rice along with some traces of iron, calcium and fibre.
How to store?
As murmura tends to become soft after a while, store in air tight container or at least in a box with well fitted lid.Its better to make new bhadanf after few days than making tooooo big batch and struggling to store.
- Start with tadka , frying garlic and chillies in heated oil.
Steps to make:
2. Fry curry leaves later.
3.Add in peanuts, dalia. Peanuts can be used raw or roasted one.
4. Add in turmeric, kAsmiri red chilli powder and fry for few seconds.
5. Add in puffed rice /murmura, salt , powdered sugar.

6. Mix well and keep stirring till puffed rice become nice and crisp.

- 150-200 gms puffed rice / murmura/ churmura/ kurmura
- 2 Tbsp oil
- 1 tsp mustard seeds
- 1/4 tsp Asafoetida (ing)
- 2 green chillies..chopped
- 2-3 tsp garlic minced
- 15-20 curry leaves
- 1/2 cup peanuts (roasted or raw)
- 1/4 cup dalia--roasted chickpeas
- 1 1/4 tsp turmeric powder
- 1 tsp Kashmiri chilli powder
- 1 tsp black salt or normal salt
- 1 Tbsp Powdered sugar

- Start be heating oil in a heavy bottom wide pan on low-medium flame. Add mustard seeds, hear them crackle and add hing.
- Add chopped chillies and minced garlic. As the garlic turns golden and chillies are fried, add curry leaves.
- As curry leaves are crisp, add in peanuts. If you are adding raw peanuts, fry them on low. If adding roasted peanuts, add them together with dalia. Fry for a minute.
- Add turmeric, chilli powder. Saute.
- Add in puffed rice, salt, powdered sugar.Mix well.
- Keep mixing for a minute or two till the puffed rice becomes crisp.If you feel Murmura mixture is oily /dark yellow, add a cup of plain murmura and mix well.
- Let it cool off before transferring to airtight container. Stays fresh and crisp up to 1 month. Enjoy with hot cup of chai.
